What are the uses of many spoons and forks on the dining tables in hotels? - dining tables

I think the spoons, forks and knives are too much on the dining tables in hotels. Ok, you can get for salad, one for the main course and dessert. But the number still appears to be more than necessary. And besides, it will be a special spoon for soup?
